Negotiation and tactics. I’m surprised @tomato hasn’t chimed in to claim the vintage cars.

There’s no reason not to drywall it -if you ever need to get behind you just cut the drywall and patch it back up, not that difficult and you shouldn’t have to do that too often unless there’s an issue plus because it’s a garage there’s not a lot of stuff in the studs anyway as far as plumbing, electrical.
